Nolen gur er cake ( sponge flavoured with date palm jaggery )

Today’s recipe is by my sir Dr. Tirthankar Guhathakurta, who is an amazing person and very close to me..
So yesterday I dropped in his place without notice but he made this amazing dessert for me..
Such easy and tasty thing to make.

This one is an Indo Western fusion dish using nolen gur which is ( I know most of you will not know ) date palm jaggery . A winter delicacy in Bengal and we love it .. 😄😄😄


So here is the recipe…

1 cup of all purpose flour (maida)
1.5 teaspoon baking powder
1 cup Nolen gur or Khejur gur (Date palm jaggery)
1 egg
1teaspoon vanilla essence
3/4 cup refined oil (any odor free oil like rice bran, sunflower, safflower, etc)
1 cup water

Step 1:
Make gur syrup.
Add half a cup of water to the Gur in a microwave safe bowl and heat for 60 second till gur melts. Take out and stir with a spoon to make the syrup.

Step 2
Make the batter.
In a wide bowl, shift flour and baking power through a sieve (or simply mix them well). To this, add one egg, vanilla essence, oil and half a cup of gur syrup and mix well.

Coat a microwave safe tray with oil and pour batter.
Bake under microwave full power (100% in a 900 watt microwave) for 4-5 min. Check with a toothpick if it comes out clean.
Once the cake slightly cools down, invert on a plate and drizzle the remaining Gur syrup on top till it is all absorbed.
Serve warm or cold.
