Masala Paneer

Well so let me tell you all that from now onward I will be posting recipes on Wednesdays along with the usual Sunday ones. So lets get started.

Today’s recipe is this oh so simple dish which literally translates into ” spicy cottage cheese ‘, it is really that only, paneer cooked with spices and curd. This North Indian curry, is served with rice or paratha or naan, and is something that our moms cook almost regularly. So this is one of those simple staple Indian curries that all of us are mad about.Hence everyone has their own recipe for this which differs from others little bit. so this is my take,

Masala paneer

Things you will need

  1.  Paneer ( cottage cheese ) – 200 gs – chopped in cubes
  2. Butter – 1 tbsp
  3.  Oil- 3 tbsp
  4. Red chilli powder- 3 tsp
  5. Cumin powder ( roasted and ground )- 1 tbsp
  6. coriander powder- 3 tsp
  7. Ginger garlic paste- 1.5 tbsp
  8. Poppy seed paste ( khus khus )- 2 tbsp
  9. Tomato Ketchup – 2 tbsp
  10. Curd – 1 cup
  11. milk- 1/2 cup ( optional )
  12. Dried Red chili – 2-3
  13.  Bay leaves – 2-3
  14. sugar- 2 tsp
  15. salt – to taste
  16. Kasturi methi – 1 tsp

How I make it  

  • take paneer cubes and add 1 pinch of, red chilli powder, cumin powder, salt and sugar, mix and keep aside for 15 minutes.
  • heat oil in a pan, add the paneer cubes, and fry till the edges turn brown.
  • take them off the flame and plunge into cold water. ( this step is very important as this will keep the paneer moist and prevent them to turn rubbery )
  • In the same oil add butter, let it melt, and add red chillies and bay leaves.
  • add the ginger garlic paste, and poppy seed paste , stir till it start to leave oil around the edges.
  • add cumin powder, coriander powder, red chilli powder, salt , sugar. Fry till the smell of raw spices goes away.
  • add water if it turns too dry ( else spices might burn) . add the ketchup and stir for a minute.
  • whip the curd, and add slowly to the gravy at very low flame. stir very gently. add the milk ( optional )
  • Now add the paneer cubes, and kasturi methi, cover and let it simmer at low flame for  a minute or two.
  • serve hot

PS: as I always say, Indian spices are very much used according to ones own perception so you may change the above mentioned amounts to suit your taste buds.
